CACAO POPS

Chocolate for breakfast makes getting out of bed so much easier. That is why I love having a jar of these healthy and delicious cacao pops in my cupboard. Perfect for those mornings that are somewhat rushed, or when your children are not particularly hungry, yet you know that they need to eat something before their busy day. They will need no convincing to eat chocolate cereal for breakfast, no one needs to know how healthy it actually is.

Ingredients:
2 cups puffed brown rice
2 Tbsp cacao powder
2 Tbsp coconut oil
2 Tbsp coconut sugar
1 tsp vanilla
Pinch of salt

Method:
Preheat the oven to 160 C. Line a large baking tray with baking paper or a silicone mat.
Melt the coconut oil, cacao powder, honey, vanilla and salt in a small pot over medium heat. Once melted, give it a good stir and remove from the heat.
Pour the puffed rice into a large mixing bowl.
Pour the melted chocolate mixture over the puffed rice, stirring it until each grain is coated.
Spoon mixture onto the prepared baking, spreading it out evenly.
Bake for 8-10 minutes.
Remove from the oven and leave it on the tray to cool down before eating or spooning into an airtight jar.
Keeps fresh for up to 1 month.
Tip:
Double the recipe so that you have enough cacao pops to last you for a month. Just bake the rice on 2 large baking trays, otherwise it won’t crisp up as well if all of the mixture is baked on one tray.
You can also melt the ingredients in a bowl in the microwave if it is easier for you.
Kids corner:
This is one of our favourite recipes to make as a family, as it is so quick and easy and the kids can munch the chocolate puffed rice during the cooking process.
They will love mixing the chocolate mixture into the puffed rice, smelling the glorious decadent aroma of chocolate while doing so.
