HEALTH BREAD

This is the easiest and quickest bread recipe, no kneading is even required. It is one of my favourite bread recipes as it is moist, full of flavour and keeps us full for much longer than a normal slice of store bought bread. I bake this health bread at least once a week and every time I make it I am amazed that something so good can take such little effort and be good sustenance for the body too. The ingredients for health bread are simple and nothing fancy. Even my husband can bake this bread!



Ingredients:

350g (3 1/2 cups) stone ground flour

125g oats

125ml seeds (I like to use a mixture)

1 ½ tsp baking powder

1 ½ tsp salt

1 tsp bicarbonate of soda

1 tsp cream of tartar

2 Tbsp honey

250ml warm water

250ml milk

1 egg Method:

Preheat the oven to 180 C.  Grease a loaf tin. Sieve dry ingredients together in a large bowl, add the oats and seeds. 

In a separate bowl or jug, dissolve the honey in the warm water.

Add milk to the honey mixture and then add the egg, mixing until all combined.

Add the wet ingredients to the dry ingredients and stir until it all comes together.

Don’t be alarmed by the wetness of the dough at this stage, this will result in a deliciously moist and light bread.

Place the dough into the tin, level the top and cut a 1cm deep line down the middle of the bread with a wet knife (this results in a beautiful shape and crust).

Bake for 1 hour.

Remove from the oven and let it cool in the tin for 10 minutes before turning it out on a wire rack to cool completely.

If you slice it immediately, it will be a bit gooey in the centre, so be patient while it cools down.

Tip:

This is a lovely versatile bread recipe as it stays fresh for a few days, is delicious used for sandwiches or toasted.

Rye flour also works incredibly well instead of  stone ground flour.
