PEANUT BUTTER FREEZER FUDGE
These lovely little peanut butter treats are so incredibly delicious and easy to make. This recipe is wonderful to make with the kids because all you need to do is mix the ingredients together, pour them into cupcake cases or ice molds and place in the freezer until set. We have a constant supply of this "fudge" in our freezer.

During lockdown this recipe went quite viral and I was blown away by how many of you made this delicious peanut butter fudge and how you all loved them. I still have so many people asking me for the recipe almost daily, so I thought it best to share it on here so it's easy to find.

This is a delicious treat for anytime of the day and I especially love them before or after a workout. I'm sure your family and friends will love them too.

PEANUT BUTTER FREEZER FUDGE:
30ml coconut oil
40ml honey
160ml peanut butter
1 tsp vanilla
Pinch salt
Pour the coconut oil and honey into a heatproof bowl.
Place in the microwave for about 40 seconds, stir and place in the microwave again until the coconut oil is completely melted.
Add the peanut butter, vanilla and a pinch of salt to the honey & coconut oil mixture.
Mix well until all combined.
Line a mini muffin tray with paper cases, pour the peanut butter mixture into the cases, place the trays in the freezer and eat once set. You can also use ice molds, silicone molds or line a small loaf pan with baking paper and slice them into squares once set.
These can last in the freezer, in an airtight container for months!
They’ll also be delicious drizzled with melted chocolate.
